Tilapia Italiano Jambalya Recipe
A quick, healthy, one pot dinner that tastes great...Try serving it with a side of brown rice

Ingredients
  • 5 plum tomatoes, chopped coarsely
  • 2 tbsp capers, drained
  • 2 tsp bottled chopped garlic, OR 3 cloves minced
  • 1 small onion,chopped
  • 14 cup black olives, pits removed and chopped
  • 1 tsp each of dried basil, oregano leaves, and granulated sugar
  • 4 nice sized tilapia fillets. OR can use fish of your liking..Pickerel is GREAT...very common her at home...But feel free to try your fave...catfish, sole etc....
  • Fresh Basil or Cilantro..Your preference...some chopped, some whole..

Directions
  1. Place the tomatoes in a large wide frying pan or wok and set to med-high heat
  2. Add capers, garlic, onion, olives, seasonings, and sugar
  3. Boil Uncovered making sure to stir often until tomatoes are soft. Approximately 8 mins.
  4. Once this is achieved, place fish in the pan and spoon mixture over the fish
  5. Cover and reduce the heat to med-low
  6. Simmer until the fish is cooked through, approximately 6-8 mins depending on thickness of the fillets
  7. Scatter with the Basil (my preference) or the cilantro if this is your choice
  8. Serve to your guests and enjoy
  9. ***IMPORTANT NOTE*** Salt and Pepper to your liking....Everyone is different
