Tilapia Italiano Jambalya

- 5 plum tomatoes, chopped coarsely shopping list
- 2 tbsp capers, drained shopping list
- 2 tsp bottled chopped garlic, OR 3 cloves minced shopping list
- 1 small onion,chopped shopping list
- 14 cup black olives, pits removed and chopped shopping list
- 1 tsp each of dried basil, oregano leaves, and granulated sugar shopping list
- 4 nice sized tilapia fillets. OR can use fish of your liking..Pickerel is GREAT...very common her at home...But feel free to try your fave...catfish, sole etc.... shopping list
- fresh basil or cilantro..Your preference...some chopped, some whole.. shopping list
How to make it
- Place the tomatoes in a large wide frying pan or wok and set to med-high heat
- Add capers, garlic, onion, olives, seasonings, and sugar
- Boil Uncovered making sure to stir often until tomatoes are soft. Approximately 8 mins.
- Once this is achieved, place fish in the pan and spoon mixture over the fish
- Cover and reduce the heat to med-low
- Simmer until the fish is cooked through, approximately 6-8 mins depending on thickness of the fillets
- Scatter with the Basil (my preference) or the cilantro if this is your choice
- Serve to your guests and enjoy
- ***IMPORTANT NOTE*** Salt and Pepper to your liking....Everyone is different
