How to make it

  • Place the tomatoes in a large wide frying pan or wok and set to med-high heat
  • Add capers, garlic, onion, olives, seasonings, and sugar
  • Boil Uncovered making sure to stir often until tomatoes are soft. Approximately 8 mins.
  • Once this is achieved, place fish in the pan and spoon mixture over the fish
  • Cover and reduce the heat to med-low
  • Simmer until the fish is cooked through, approximately 6-8 mins depending on thickness of the fillets
  • Scatter with the Basil (my preference) or the cilantro if this is your choice
  • Serve to your guests and enjoy
  • ***IMPORTANT NOTE*** Salt and Pepper to your liking....Everyone is different
