Chicken A Lorange

- 2 broiler-size(2-21/2lb) chickens,quartered shopping list
- 2Tbs butter shopping list
- 1/2tsp salt shopping list
- 1/4tsp pepper shopping list
- 1/4tsp dried tarragon shopping list
- 1/2c minced green onion shopping list
- 1 clove garlic,peeled and minced shopping list
- 1/2c fine chopped celery shopping list
- 4Tbs butter shopping list
- 1/4c cointreau2Tbs lemon juice shopping list
- 2c chicken stock or broth shopping list
- 1/4c tomato paste shopping list
- Minced parsley for garnish shopping list
How to make it
- Preheat oven to 375. Arrange quartered chicken pieces in a long shallow bakingdish. Bake in preheated oven 30 mins,turning pieces twice during cooking. In a small skillet,melt butter,stir in salt,pepper,paprika and tarragon;pour evenly over chicken pieces. Continue to bake 15 mins,until chicken is tender and browned. While chicken bakes,prepare sauce;saute onion,garlic and celery in butter till soft. Add remaining ingredients;stir till blended,bring to a boil;lower heat and lett simmer very gently,about 30 mins or till thick and smooth. Arrange pieces on serving platter. Pour sauce over and sprinkle with parsley.
