How to make it

  • Add a generous amount of EVOO to a large skillet and saute the squash, onions, and mushrooms until the onions become transluscent. Add additional veggies as desired and continue cooking to taste. I like the onions a bit carmelized.
  • Right before serving, sprinkle with salt and freshly ground pepper and 1/2 - 1 c. grated cheese [reggiano parmasan or any good hard Italian cheese, a good cheddar] and allow it to melt.
