Cheesy Veggie Side Dish Recipe
This dish is mainly sliced zucchini, onion and fresh mushrooms, but can be modified to use up any fresh veggies you have.

Ingredients
  • Thinly slice the following:
  • 2 c. zucchini or yellow squash
  • 2 c. white or yellow onion
  • 2 c. fresh mushrooms
  • Possible additions:
  • 1 c. Broccoli, or
  • 1 c. chopped fresh tomato with a generous handful of chopped parsley right before serving.

Directions
  1. Add a generous amount of EVOO to a large skillet and saute the squash, onions, and mushrooms until the onions become transluscent. Add additional veggies as desired and continue cooking to taste. I like the onions a bit carmelized.
  2. Right before serving, sprinkle with salt and freshly ground pepper and 1/2 - 1 c. grated cheese [reggiano parmasan or any good hard Italian cheese, a good cheddar] and allow it to melt.
