Light Sesame Noodles Recipe
A light and refreshing choice for dinner on those hot summer nights when you don't feel like heating up the kitchen to much.

Ingredients
  • 1 pkg refrigerated angel hair pasta
  • 2c shredded carrots
  • 2tsp vegetable oil
  • 12oz chicken tenders, sliced thin
  • 2 garlic cloves minced
  • 1 medium orange
  • 3T seasoned rice vinegar
  • 2T soy sauce
  • 1tsp sugar
  • 2tsp asian sesame oil
  • 1tsp fresh ginger, grated
  • 1/8tsp cayenne
  • 2 green onions thinly sliced
  • 2T toasted sesame seeds
  • 4 large radishes, halved and thinly sliced

Directions
  1. Cook pasta. Place carrots in a colander, drain pasta over carrots to softened; transfer to bowl.
  2. Heat vegetable oil over medium high heat; add chicken and garlic, cook until done about 4-5 mins. Add to pasta
  3. DRESSING: From orange grate 1tsp rind and squeeze out 1/4c of juice. Mix with vinegar, soy sauce, sugar, sesame oil, ginger and cayenne.
  4. Toss with pasta, chicken and green onion; sprinkle with toasted sesame seeds.
