Dijon-crusted Halibut Recipe
This is a wonderful, dijon-spiced, lemony, flakey fish. It's quick and bakes in 15 minutes! Inspired by All-recipes.com

Ingredients
  • 1/4 cup mayo
  • 2 Tbs freshly grated parmesan cheese, divided
  • 1 Tbs dijon mustard
  • 1 Tbs fresh lemon juice
  • 1/2 cup plain breadcrumbs, divided
  • 4 filets of halibut
  • 1 TBS margarine, melted

Directions
  1. Preheat oven to 350.
  2. Lightly grease baking sheet
  3. Combine mayo, 1 Tbs parmesan cheese, dijon, lemon juice in a small bowl
  4. mix ingredients together
  5. stir in 1/4 cup bread crumbs
  6. arrange filets on baking sheet
  7. spread bread crumb mixture, evenly over filets
  8. In another small bowl combine melted margarine, remaining cheese and bread crumbs. Mix together and sprinkle over fish
  9. Bake 15-17 minutes until fish flakes with a fork

  11. ***By the way, Step number 8 can be omitted entirely and your fish will still be delicious, and have plenty of flavor and zestiness! (and you reduce some of the calories!)

Would you happen to have any suggestions for a "Horseradish" crusted halibut??? Maybe omit the dijon and sub. with horseradish??? Thanks for the recipe, I think I might experiment a bit with it.
