Coffee Spiced Chicken Satays

- 1 tablespoon minced fresh ginger root shopping list
- 2 cloves garlic, minced shopping list
- 2 tablespoon ground coffee, Colombian, Sumatra or similar shopping list
- 2 tablespoons peanut oil shopping list
- 1/4 cup low-sodium soy sauce shopping list
- 2 tablespoons chunky peanut butter, freshly ground if possible shopping list
- 1 tablespoon light brown sugar shopping list
- 2 tablespoons lime juice shopping list
- 3 cloves shopping list
- 1 tablespoon curry powder shopping list
- 1 teaspoon crushed red chilies shopping list
- 2 pounds chicken tenders shopping list
- 24 wooden skewers shopping list
How to make it
- prep does not include overnight marinating
- Peel and mince fresh ginger root. Mince garlic.
- In a large bowl, combine the ginger root and garlic with all the other ingredients thoroughly, except the chicken, and set aside while you thread the chicken pieces onto the skewers.
- When done, place the skewers in a deep glass dish then pour the marinade over the skewered chicken.
- Cover tightly and let them marinate in the refrigerator overnight, or at least several hours before grilling.
- To cook, heat coals or gas to medium heat on your grill.
- Remove the skewers from the dish and place on the grill all at once.
- Cook about 5 minutes on each side, or until cooked through.
- Use remaining marinade to brush onto the skewers, as necessary.
