Spicy Stir Fried Eggplant

- 1 medium eggplant, peeled and cut into 1 in. dice shopping list
- 1 tsp. garlic, finely chopped shopping list
- 1 tbls. cornstarch mixed with 2 tbls. water to make a paste shopping list
- oil for deep frying shopping list
- Sauce shopping list
- 2 tbls. oyster sauce shopping list
- 2 tbls. soy sauce shopping list
- 2 tbls. water shopping list
- 1 tbls. white vinegar shopping list
- 1 tbls. sugar shopping list
- 1 tsp. chili paste shopping list
- 1/2 tsp. bean sauce shopping list
- 1/2 tsp. sesame oil shopping list
How to make it
- Mix all sauce ingredients together and set aside
- Put enough oil in wok to deep fry eggplant
- Heat to 350
- Fry eggplant for 1 minute
- Remove and drain on paper towel
- Remove all but 1 tsp.oil from wok
- Stir-fry garlic for 5 seconds then add sauce
- Reduce heat and simmer 20 seconds
- Add eggplant and simmer for 10 seconds
- Stir in cornstarch paste slowly until desired consistency
