Ingredients
  • 1 medium eggplant, peeled and cut into 1 in. dice
  • 1 tsp. garlic, finely chopped
  • 1 tbls. cornstarch mixed with 2 tbls. water to make a paste
  • Oil for deep frying
  • Sauce
  • 2 tbls. oyster sauce
  • 2 tbls. soy sauce
  • 2 tbls. water
  • 1 tbls. white vinegar
  • 1 tbls. sugar
  • 1 tsp. chili paste
  • 1/2 tsp. bean sauce
  • 1/2 tsp. sesame oil

Directions
  1. Mix all sauce ingredients together and set aside
  2. Put enough oil in wok to deep fry eggplant
  3. Heat to 350
  4. Fry eggplant for 1 minute
  5. Remove and drain on paper towel
  6. Remove all but 1 tsp.oil from wok
  7. Stir-fry garlic for 5 seconds then add sauce
  8. Reduce heat and simmer 20 seconds
  9. Add eggplant and simmer for 10 seconds
  10. Stir in cornstarch paste slowly until desired consistency
