  • When preparing baked potatoes for a dinner, try this:
  • In a large pot place 3 cups of salt, the potatoes for the meal and enough water to cover by 2" over the potatoes (use more pots if they don't all fit), Boil the potatoes until cooked through, then bake as usual. The heavy salt content of the boiling solution causes the water to boil at a higher temerature than the normal 212 degrees, and produces a more fluffy texture to the potato after it is baked. It also adds a slight salt crust to the outside peel after baking.
