Crootini Con Ricotta Alle Verdure Recipe
Garden Crostini. An easy antipasto, hors d'oeuvre snack.

Ingredients
  • 8 oz. Ricotta
  • 3 Tbsp Finely chopped fresh Basil.
  • 2 Tbsp Finely chopped Scallions
  • 8 finely chopped Black Olives
  • 1 Tbsp Finely chopped fresh Parsley.
  • 1 Tbsp Olive Oil
  • 1 small Carrot, peeled and finely shredded.
  • 3 tbsp unsalted butter, softened
  • Salt and Pepper to taste.
  • 12 thin Baguette Slices.

Directions
  1. Preheat oven to 400 degrees
  2. In a medium bowl, thoroughly combine ricotta, basil, scallions, black olives, olive oil, carrots, salt and pepper.
  3. Stir until well blended.
  4. Lightly butter bread and place on a baking sheet buttered-side up.
  5. Bake for about 8 minutes or until lightly browned.
  6. Spoon ricotta mixture over crostini (toasted bread)
  7. Best served warm.
