Crootini con Ricotta alle Verdure

- 8 oz. Ricotta shopping list
- 3 Tbsp Finely chopped fresh basil. shopping list
- 2 Tbsp Finely chopped scallions shopping list
- 8 finely chopped black olives shopping list
- 1 Tbsp Finely chopped fresh parsley. shopping list
- 1 Tbsp olive oil shopping list
- 1 small carrot, peeled and finely shredded. shopping list
- 3 tbsp unsalted butter, softened shopping list
- salt and pepper to taste. shopping list
- 12 thin baguette Slices. shopping list
How to make it
- Preheat oven to 400 degrees
- In a medium bowl, thoroughly combine ricotta, basil, scallions, black olives, olive oil, carrots, salt and pepper.
- Stir until well blended.
- Lightly butter bread and place on a baking sheet buttered-side up.
- Bake for about 8 minutes or until lightly browned.
- Spoon ricotta mixture over crostini (toasted bread)
- Best served warm.
