Radicchio And Cabbage With Herbed Anchovy Sauce Recipe

Ingredients
  • 1 tsp Anchovy Paste
  • 1 tbsp Dijon Mustard
  • 1 tbsp Lemon Juice
  • 1 clove Garlic, crushed
  • 1/2 tsp chopped dried Rosemary
  • 1 tbsp minced Parsley
  • 1/2 cup Olive Oil (divided)
  • 1 small head Radicchio, quartered lenghtwise
  • 1 small head Red Cabage, sliced in wedges.
  • Salt and pepper to taste.

Directions
  1. In a small bowl, thoroughly combine anchovy paste, mustard, lemon juice, garlic, rosemary and parsley.
  2. Add 6 tbsp of olive oil while whisking to make a smooth sauce.
  3. Discard Garlic.
  4. Heat a large skillet over medium-high heat.
  5. Brush radicchio and cabbage with remaining olive oil.
  6. Cook in preheated skillet 8 to 10 minutes, turning occasionally until tender.
  7. Season with salt and pepper.
  8. Stir in sauce and serve over warm radicchio and cabbage.
