How to make it

  • Preheat oven to 400 degrees, and bring a pot of salted water to boil for the pasta and cauliflower.
  • In a bowl combine tomatoes, cream, both cheeses, jalapenos, pepper flakes and salt.
  • Drop the penne and cauliflower in the boiling water and cook for 5 minutes.
  • Drain, add to bowl with sauce, and toss.
  • Transfer to a large baking dish sprayed with non-stick spray (Pam).
  • Dot the dish with butter, cover with foil, and bake for 15 minutes.
  • Remove foil and bake for another 5 minutes.
  • Serve.
