Greek Inspired Meatballs Recipe

Ingredients

3/4 Cup of breadcrumbs soaked in 1/2 cup of water

1 1/2 Pounds lean ground beef

1 Large onion finely chopped

3 Tablespoons chopped parsley

1 Teaspoon dry mint leaves

1 Teaspoon oregano

2 Cloves garlic minced

1 Tablespoon olive oil

2 Eggs

1 Tablespoon fresh lemon juice

1 Teaspoon salt

1/4 Teaspoon pepper

Flour for dredging

1 Cup olive oil for cooking

Directions

1. In a large bowl mix the breadcrumbs into the ground beef. Add all the other ingredients except the flour and oil. Mix well and form into meatballs.

2. Heat the oil in a skillet over medium heat. Dredge the meatballs in flour. Fry the meatball in the oil turning often until golden brown. Add more oil as needed. Enjoy

Note: Don't over crowd the skillet, so it may take 2 or 3 batches.

These meatballs "keftedakia" the way you make them are perfect - Another traditional Greek/Middle Eastern way of serving them is to toss them in a thick yoghurt and garlic sauce and then copiously sprinkle them with herbs.
