Nonya Pork Satay

- 1 pound pork tenderloin, cut into 1" cubes shopping list
- 1 tsp. light brown sugar or sugar-in -the-raw shopping list
- 1 tsp. anchovie paste, or mashed anchovie filets shopping list
- 2 pieces lemon grass (tender part only), 2" long shopping list
- 2 Tbl. coriander seeds, dry fried shopping list
- 6-8 macadamia nuts (use blached almonds in a pinch, not quite the same) shopping list
- 2 medium onions, coarsely chopped shopping list
- 5 red Thai bird chilies, seeded and coarsely chopped shopping list
- 1/2 tsp. ground tumeric shopping list
- 8 oz (1/2 pint) coconut milk shopping list
- 2 Tbl. peanut oil (or any other vegetable oil) shopping list
How to make it
- Spread pork out in ashallow dish and sprinkle with the sugar, set aside.
- Fry the anchovie paste briefly in a dry pan.
- Finelyb chop the lemon grass.
- process the coriander seeds to a powder in a food processor.
- Add the macadamia nuts and lemon grass and process briefly.
- Add the onions, chilies, anchovie paste, tumeric, and a little salt and process into a paste.
- Pour in the coconut milk and oil, and mix briefly.
- Pour the mixture over the pork and let marinate about 1-2 hours.
- Preheeat the grill.
- Thread three pieces of pork onto water soaked bamboo skewers. Repeat the process for the remaining pork and grill 8-10 minutes, basting frequently with the remaining marinade.
- Serve while hot with cucumber chunks on the side.

Interesting interpretation of satay. When you say anchovies do you mean the Italian anchovies packed in oil or something else?
