Penne And Mushroom Salad With Creamy Balsamic Dressing Recipe

This is a Rose Reisman recipe and is wonderful. We had it with sandwiches and was very filling

Ingredients
- Dressing:
- 1/3 cup sour cream
- 2 tbsp mayonnaise
- 2 tbsp balsamic vinegar
- 2 tbsp fresh lemon juice
- 1 1/2 tbsp honey
- 1 tsp minced garlic
- 1 tsp hot chili sauce ( optional)
- Salad:
- 1 lb mushrooms, cleaned and quartered
- 3/4 cup chopped red pepper
- 1/2 cup fresh coriander
- 1/2 cup red onions
- 1/3 cup black olives
- 2 oz light feta cheese, crumbled
- 12 oz penne
Directions
- In a bowl combine sour cream, mayonnaise, balsamic vinegar, lemon juice, honey, garlic and chili sauce; whisk well. set aside
- In a large nonstick frying pan sprayed with veggie spray, cook mushrooms over med heat for 5 minutes or until softened. Drain any liquid.
- In a serving bowl, combine mushrooms, red peppers, coriander, red onions, black olives and feta cheese
- Pour dressing over; toss to coat
- In a large pot of boiling water, cook penne until done. Rinse under cold running water; drain well
- Add to salad; toss well
- Enjoy
