How to make it

  • In a cooking pot, combine:
  • 10 halved key limes
  • minced garlic
  • honey
  • vinegar
  • bring to a boil and reduce this liquid to ½ the original volume
  • The salmon steaks:
  • drizzle the salmon steaks with olive oil, salt and pepper
  • On high heat setting, grill the steaks, giving a one-quarter turn after 5 minutes for the grate marks
  • Turn the fish, and drizzle with olive oil, salt and pepper, on the other side
  • Pour the reduction over the finished salmon steaks
  • Garnish:
  • Halved key lime with fresh sprig of parsley
