Saw this at a dinner party, had to have the recipe. So easy and so good!

Ingredients
  • 20 approx, vanilla wafers or chocolate cookies
  • 1/3 cup heavy cream
  • 1/4 cup sugar
  • 8 oz marscarpone cheese
  • dash vanilla
  • 1 cup fresh red raspberries

Directions
  1. Beat cheese, cream and sugar and vanilla medium high speed to to stiff peaks.
  2. Pipe or dollop some cream mixture over each cookie.
  3. Top with a red raspberry
  4. Serve at once.
