If you find yourself with extra strawberies in the fridge, why not make this simple low-calorie strawberry sauce, delicious over pancakes, waffles and crepes. Or even on ice cream and cakes.

Ingredients
  • 2 cups strawberries, sliced
  • 2 tbs white refined sugar
  • 1 1/2 tsp cornstarch
  • 1/4 tsp rum flavoring

Directions
  1. Combine strawberries and sugar, cover and chill overnite.
  2. Drain and reserve juice.
  3. Add water to juice to equal 1/2 cup liquid.
  4. Combine liquid with cornstarch; stir until dissolved.
  5. Cook over medium heat, stirring constantly, until thickened and clear. Stir in strawberries and rum flavoring.
  6. Serve warm or chilled.

Great post. I did a similar thing with apricots.
