Mexican Lasagna

- 2 pounds ground beef, browned shopping list
- 1 (16 oz) can refried beans shopping list
- 1/2 tsp dried oregano shopping list
- 2 tsp ground cumin shopping list
- 3/4 tsp garlic powder shopping list
- 12 uncooked lasagna noodles shopping list
- 2 1/2 cups water shopping list
- 2 1/2 cups salsa shopping list
- 2 cups sour cream shopping list
- 1 (2 1/2 oz) can sliced black olives shopping list
- 3/4 cup sliced green onions shopping list
- 1 cup shredded pepperjack or Mexican blend cheese shopping list
How to make it
- Preheat oven to 350 degrees.
- Lightly spray a 13x9 inch baking dish with nonstick cooking spray.
- Combine ground beef, beans, oregano, cumin & garlic powder.
- Place 4 noodles in bottom of baking dish.
- Spread half the mixture over noodles.
- Top with 4 more noodles and add remaining beef mixture.
- Cover with remaining noodles.
- Combine water and salsa. Pour over noodles in pan. Cover with foil.
- Bake 1 1/2 hours or until noodles are tender.
- Combine sour cream, onions & olives.
- Spoon over lasagna and top with shredded cheese.
- Bake uncovered until cheese melts.
- Remove and let stand for 10 minutes to set.
