Mexican Lasagna Recipe
A pretty easy dish to put together and has lots of flavor. A Mexican dish with noodles.

Ingredients
  • 2 pounds ground beef, browned
  • 1 (16 oz) can refried beans
  • 1/2 tsp dried oregano
  • 2 tsp ground cumin
  • 3/4 tsp garlic powder
  • 12 uncooked lasagna noodles
  • 2 1/2 cups water
  • 2 1/2 cups salsa
  • 2 cups sour cream
  • 1 (2 1/2 oz) can sliced black olives
  • 3/4 cup sliced green onions
  • 1 cup shredded pepperjack or mexican blend cheese

Directions
  1. Preheat oven to 350 degrees.
  2. Lightly spray a 13x9 inch baking dish with nonstick cooking spray.
  3. Combine ground beef, beans, oregano, cumin & garlic powder.
  4. Place 4 noodles in bottom of baking dish.
  5. Spread half the mixture over noodles.
  6. Top with 4 more noodles and add remaining beef mixture.
  7. Cover with remaining noodles.
  8. Combine water and salsa. Pour over noodles in pan. Cover with foil.
  9. Bake 1 1/2 hours or until noodles are tender.
  10. Combine sour cream, onions & olives.
  11. Spoon over lasagna and top with shredded cheese.
  12. Bake uncovered until cheese melts.
  13. Remove and let stand for 10 minutes to set.
