Ingredients
  • One 15oz can of kidney beans
  • One 15 oz can of pinto beans
  • Two 14.5 oz cans diced tomatoes w/juice
  • ½ cup chopped celery
  • 1 cup diced yellow onion
  • 2 Tbls chopped fresh garlic
  • 1 cup peeled, diced delicate squash (zucchini)
  • ½ cup diced red pepper
  • 2 cup low-sodium organic vegetable broth
  • 2 Tbls Blackstrap molasses
  • 3 Tbls chili powder
  • 1 Tbl ground cumin

Directions
  1. Combine all ingredients in a large sauce pan.
  2. Cover and simmer over medium low heat for 20 minutes or until the vegetables are cooked through.
