Jersey Fresh Tomatoes And Pasta Recipe
This no cook sauce is perfect with fresh summer tomatoes. Using a four sided box grater on the tomatoes is a great trick, too!

Ingredients
  • 2 medium fresh ripe tomatoes
  • 1-4 garlic cloves
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon goat cheese
  • salt and pepper to taste
  • 1/3 pound angel hair or spaghetti

Directions
  1. Put water on to boil for the pasta.
  2. Cut cleaned tomatoes in half horizontally, around the "equator".
  3. Using the bigger holes of a box grater, scrape the tomato across until all the pulp is "grated" into a medium mixing bowl. Kind of flatten your hand on the tomato as you go, and you'll be left with a flat piece of tomato skin and no cuts on your hand!
  4. Finely chop garlic and add to tomatoes, along with olive oil, cheese and salt and pepper.
  5. Cook pasta to al dente, drain and add to bowl with tomato mixture.
  6. Stir well and serve.
  7. I like to let this sit for a few minutes and serve at room temperature.
