How to make it

  • Drain the juice from the pineapple into a 2 cup measure. Reserve the pineapple. Add water to the juice in the measuring cup if necessary so that you have 2 cups of liquid.
  • Heat juice-water mixture to boiling.
  • Add both packages of gelatin and stir well until totally dissolved.
  • Cool to room temperature.
  • Mix cottage cheese and mayonnaise and stir in.
  • Add pineapple and nuts.
  • Put in refrigerator to set up until serving time.
  • Sprinkle with additional chopped nuts if desired.

    I am confused because the recipe says "drain" but then it says add the water to the juice, and then it doesn't mention the pineapple chunks. If we are going to use both the juice and the pineapple chunks, why would we drain it?
