Lemon Lime Pineapple Salad Recipe

Ingredients
  • 2 14-15 ounce cans pineapple chunks
  • 1 cup cottage cheese
  • 3 ounce package lime gelatin
  • 3 ounce package lemon gelatin
  • 1 cup mayonnaise
  • 1/4 cup pecans or walnuts, crushed

Directions
  1. Drain pineapple into a 2 cup measure. Add water to the juice to make 2 cups.
  2. Heat juice mixture to boiling.
  3. Add both packages of gelatin and stir well until totally dissolved.
  4. Cool to room temperature.
  5. Mix cottage cheese and mayonnaise and stir in.
  6. Add nuts.
  7. Put in refrigerator to set up until serving time.
  8. Sprinkle with additional chopped nuts if desired.

Yum, a memory of a classic from growing up. Love this stuff. Great post and a high 5.


I am confused because the recipe says "drain" but then it says add the water to the juice, and then it doesn't mention the pineapple chunks. If we are going to use both the juice and the pineapple chunks, why would we drain it?
