Rice Medley Recipe
This is a standby that I use for something quick and easy and also a way to get rid of leftover meat. The measurements are suggestions I use more or less depending on my mood.

Ingredients
  • 4 cups of cooked rice
  • 1/4 cup olive oil and more if needed
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup whole kernel corn
  • Meat (optional) Use leftover chicken, turkey, ham, pork, beef, or fry up small cubed pancetta or even bacon.
  • Salt and pepper to taste or any other seasonings you like.

Directions
  1. Heat a large skilled over medium high. Put your olive oil in the pan and let it heat up.
  2. Add onion and garlic and cook for about 2 minutes. Make sure not to burn the garlic or it gets bitter. You might need to lower the heat.
  3. Add the red bell pepper and cook until soft.
  4. Add your already cooked meat and corn and heat through.
  5. Toss with the rice and add more olive oil if too dry.
  6. Season well and enjoy!
