Cold Noodles With Sesame Sauce

- 1 cucumber shopping list
- 1/2 pound fresh thin Chinese egg noodles shopping list
- 1 T. plus 1 t. sesame oil shopping list
- 4 T. roasted sesame seeds (3 of them ground) shopping list
- 2 T. soy sauce shopping list
- 2 t. Chinese black vinegar shopping list
- 1 & 1/2 t. sugar shopping list
- 1/8 t. salt shopping list
- 1/8 t. white pepper, or more if you like spicy-plus shopping list
- 1 T. vegetable oil shopping list
- 1 T. vegetable stock, or water shopping list
How to make it
- Peel the cucumber, cut in half lengthwise, scoop out the seeds, and cut into thin slices. Put into a plastic bag and refrigerate.
- Bring 10 cups of water to a boil in a large pot. When it boils, separate the noodles and add to the later. Return to the boil, then add 1 c. of cold water.
- Return to the boil again, then add another cup of cold water.
- Return to the boil a third time, then drain and cool in cold water.
- Put drained noodles into a serving bowl and toss with 1 T. of sesame oil.
- Mix 1 t. sesame oil, 3 T. ground sesame seeds, soy sauce, vinegar, sugar, cayenne, salt, white pepper, oil and stock in a small bowl.
- Beat with a fork until smooth.
- Pour the sauce over the noodles, then mix in the cucumbers and whole sesame seeds.
