Chicken Thousand Island Slaw Recipe
I'm very picky about coleslaw but this one was so good it practically disappeared. We polished it off fast. Adapted from a Gourmet magazine recipe. Easy too.

Ingredients
  • 1 cooked rotisserie chicken
  • 1 c. mayonnaise
  • 1/3 c. grated sweet onion
  • 1/4 c. catsup
  • 4 t. cider vinegar
  • 2 T. dill relish
  • 1 t. caraway seeds
  • 1-1/2 pound coleslaw mix (about 10 cups)

Directions
  1. Remove chicken meat from bones and shred or slice;
  2. Whisk together mayo, onion, catsup, vinegar, relish, caraway seeds, 1/2 t. salt, and 1/4 t. pepper in a large bowl;
  3. Add coleslaw mix and stir to coat;
  4. Transfer to a shallow serving dish and top with chicken.

This looks like quite a unique way for coleslaw. I think I will give this a try soon. It's nice because aside from the sugar in the Catsup it doesn't have any additional sweet stuff.
