Sunnies Super Chili Recipe
This chili is loaded with beans and vegetables. Goes great with corn chips and/or corn bread.

Ingredients
  • Step 1...
  • About 1 cup of each diced fine:
  • Onion
  • Red Pepper (Green Pepper can be used too)
  • Carrots
  • Celery
  • (The Pampered Chef food chopper works great for dicing all this.)
  • 2-3 cloves chopped fresh garlic
  • 1 lrg or 2 small diced very fine jalapeños w/out seeds.

  • Put 2-3 Tbsp. olive oil in large Dutch oven pot and heat over medium heat until hot.
  • Put above ingredients in Dutch oven pot and sauté over medium+ heat for 10-15 minutes, veggies should start to soften, season with a few good shakes or dashes of salt, pepper, cumin, cayenne pepper, garlic powder....

  • 1 can each drained & rinsed
  • Kidney Beans
  • Garbanzo Beans
  • Black Beans
  • Pinto Beans (can use the Pinto Beans in Chili Sauce)
  • Mexi Corn
  • ------------------
  • 2 cans diced tomato with juice (Whatever kind you like.)
  • 1 can diced Green Chilies
  • 1 can Cream of Mushroom Soup (this is the secret ingredient-makes it really good.)
  • 1/4 to 1/2 small size can Chilies in Adobo Sauce (Mexican section of store) 2-4 of the peppers diced with some of the sauce. Be careful, these are HOT.

  • 1 lb cooked hamburger or 1 bag Morning Star Veggie Crumblers (people can’t tell the difference until I tell them it is veggie burger.)

  • 2 packs McCormick Chili Season (by Taco Season in the Store) (Use Tex-Mex Chili Season if you can find it)

  • Add the rest of the ingredients stir, cover and simmer over low+ heat for 2-3+ hours, stirring often making sure the veggies such as the carrots and celery are soft when done.
  • ---------------------------------------
  • If you want it to be spicier add 3-6 diced pickled jalapeño rings or a few dashes of hot sauce.
  • ---------------------------------------------
  • Serve with cooked hot rice (I use 2 of the Uncle Ben’s boil in the bag kind), salsa, sour cream, corn chips, jalapeño rings, diced green onion, and shredded mexi cheese.
  • (Feel free to add to or take away what ever you like.)

  • Put a few large spoons full of rice in bottom of bowl; add a few scoops of chili, top with a little cheese, sour cream, diced green onion, jalapeños...use whatever you like. :) Put corn chips all the way around the edge of the bowl. corn bread with honey butter are great too. Enjoy!

Wow gotta love this chili thanks


I am a fan of all kinds of chili love heat from those papers in adobo sauce, the mushroom soup sounds interesting I have used mushrooms before.
Five forks and a big smile :)
