Sunnies Super Chili

- Step 1... shopping list
- About 1 cup of each diced fine: shopping list
- onion shopping list
- red pepper (Green Pepper can be used too) shopping list
- carrots shopping list
- celery shopping list
- (The Pampered Chef food chopper works great for dicing all this.) shopping list
- 2-3 cloves chopped fresh garlic shopping list
- 1 lrg or 2 small diced very fine jalapeños w/out seeds. shopping list

- Put 2-3 Tbsp. olive oil in large Dutch oven pot and heat over medium heat until hot. shopping list
- Put above ingredients in Dutch oven pot and sauté over medium+ heat for 10-15 minutes, veggies should start to soften, season with a few good shakes or dashes of salt, pepper, cumin, cayenne pepper, garlic powder.... shopping list

- 1 can each drained & rinsed shopping list
- kidney beans shopping list
- garbanzo beans shopping list
- black beans shopping list
- pinto beans (can use the pinto beans in chili sauce) shopping list
- Mexi corn shopping list

- 2 cans diced tomato with juice (Whatever kind you like.) shopping list
- 1 can diced green chilies shopping list
- 1 can cream of mushroom soup (this is the secret ingredient-makes it really good.) shopping list
- 1/4 to 1/2 small size can chilies in adobo sauce (Mexican section of store) 2-4 of the peppers diced with some of the sauce. Be careful, these are HOT. shopping list

- 1 lb cooked hamburger or 1 bag Morning Star Veggie Crumblers (people can’t tell the difference until I tell them it is veggie burger.) shopping list

- 2 packs McCormick chili season (by taco season in the Store) (Use Tex-Mex chili season if you can find it) shopping list

- Add the rest of the ingredients stir, cover and simmer over low+ heat for 2-3+ hours, stirring often making sure the veggies such as the carrots and celery are soft when done. shopping list

- If you want it to be spicier add 3-6 diced pickled jalapeño rings or a few dashes of hot sauce. shopping list

- Serve with cooked hot rice (I use 2 of the Uncle Ben’s boil in the bag kind), salsa, sour cream, corn chips, jalapeño rings, diced green onion, and shredded mexi cheese. shopping list
- (Feel free to add to or take away what ever you like.) shopping list

- Put a few large spoons full of rice in bottom of bowl; add a few scoops of chili, top with a little cheese, sour cream, diced green onion, jalapeños...use whatever you like. :) Put corn chips all the way around the edge of the bowl. corn bread with honey butter are great too. Enjoy! shopping list
