Awesome way to eat onions. These go great with everything. I like them on grilled hamburgers and also great over salmon. Yummo

Ingredients
  • 2 medium red onions
  • 1 quart boiling water
  • 3/4 cup rice wine vinegar
  • 1/2 cup cold water
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon hot pepper flakes

Directions
  1. Slice onions into rings then peel away the skin.
  2. Separate rings and place them in a bowl.
  3. Pour boiling water over all and allow to sit for 3 minutes.
  4. Drain onions and return to the bowl.
  5. Immediately cover with vinegar and cold water.
  6. Add peppercorns and hot pepper.
  7. Cover and refrigerate for 1 hour before serving.
