Braised Sea Bass with Moroccan Spiced Sauce

- 1/4 cup chopped coriander shopping list
- 1/4 cup chopped parsley shopping list
- 3 cloves garlic, chopped shopping list
- 2 tbsp olive oil shopping list
- 1/2 tsp crushed red pepper flakes or to taste shopping list
- 2 tsp ground cumin shopping list
- 2 tsp sweet paprika shopping list
- Pinch cinnamon shopping list
- 3 tbsp lemon juice shopping list
- 1 tsp grated lemon zest shopping list
- Salt and freshly ground pepper to taste shopping list
- Four 6 oz Chilean sea bass fillets, skin removed shopping list
- Moroccan spiced Sauce: shopping list
- 2 tbsp olive oil shopping list
- 1/2 cup chopped onion shopping list
- 2 cups chopped canned or fresh tomatoes shopping list
How to make it
- In a food processor or by hand, combine coriander, parsley and garlic.
- Process until chunky.
- Add olive oil, red pepper flakes, cumin, paprika, cinnamon, lemon juice and zest.
- Season with salt and pepper.
- Process until all ingredients are combined.
- Spread half of spice mixture over fish fillets in a baking dish and marinate for 30 minutes.
- For sauce, heat olive oil in a large skillet on medium heat.
- Add onion and sauté 2 minutes or until onion is softened.
- Stir in remaining spice mixture and tomatoes.
- Simmer together for 10 minutes.
- Place fish on top of sauce, cover and simmer for 10 to 15 minutes or until fish is cooked and it begins to split on top.
- Place fish on serving plate and pour sauce around.

This sounds great. Especially the paste. I love Chilean sea bass. But it is so over fished, I feel guilty using it. Maybe cod or grouper would be almost at good.
