Ingredients
  • 1/4 cup chopped coriander
  • 1/4 cup chopped parsley
  • 3 cloves garlic, chopped
  • 2 tbsp olive oil
  • 1/2 tsp crushed red pepper flakes or to taste
  • 2 tsp ground cumin
  • 2 tsp sweet paprika
  • Pinch cinnamon
  • 3 tbsp lemon juice
  • 1 tsp grated lemon zest
  • Salt and freshly ground pepper to taste
  • Four 6 oz Chilean sea bass fillets, skin removed
  • Moroccan Spiced Sauce:
  • 2 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 cups chopped canned or fresh tomatoes

Directions
  1. In a food processor or by hand, combine coriander, parsley and garlic.
  2. Process until chunky.
  3. Add olive oil, red pepper flakes, cumin, paprika, cinnamon, lemon juice and zest.
  4. Season with salt and pepper.
  5. Process until all ingredients are combined.
  6. Spread half of spice mixture over fish fillets in a baking dish and marinate for 30 minutes.
  7. For sauce, heat olive oil in a large skillet on medium heat.
  8. Add onion and sauté 2 minutes or until onion is softened.
  9. Stir in remaining spice mixture and tomatoes.
  10. Simmer together for 10 minutes.
  11. Place fish on top of sauce, cover and simmer for 10 to 15 minutes or until fish is cooked and it begins to split on top.
  12. Place fish on serving plate and pour sauce around.

I love Chilean Bass - and the sauce sounds fabulous!


This sounds great. Especially the paste. I love Chilean sea bass. But it is so over fished, I feel guilty using it. Maybe cod or grouper would be almost at good.
