These are great for a fast lunch. We usually make a triple batch and they are there in the freezer for the Grandkids or hubby to have on weekends for a snack.. You can also brush with butter and do in the oven or toaster oven.

Ingredients
  • 4 Flour tortillas
  • 1 c Shredded Monterey Jack
  • cheese (4 oz)
  • 1/2 c Coarsely chopped cooked
  • shrimp or imitation shrimp
  • 1/4 c Thinly sliced green onions
  • and tops
  • 1 tb Finely chopped cilantro

Directions
  1. Sprinkle half of each tortilla with cheese, shrimp, onions, and cilantro.
  2. Fold tortillas into halves.
  3. Pack in freezer bags and freeze.
  4. TO COOK: Thaw at room temperature 10-15 minutes.
  5. Cook in lightly greased skillet over medium heat until golden on both sides.
  6. Cut each tortilla into 4 wedges.
  7. Serves 4.
