Lime And Cilantro Butter Recipe

Ingredients

1 1/2 sticks sweet butter

juice and zest of one lime

1/2 cup chopped fresh cilantro

salt and pepper to taste

Directions

In a small bowl, combine all the ingredients.

Form into a log on waxed paper or plastic or put into a butter mold.

Chill until ready to use, then cut off small pieces and arrange on a plate.

I'm a lone shrimp eater in the house and this sounds perfect. Just cut off a little for a few shrimp(YUM) and it wont go to waste since it can be used for so many other things as well.

After making the recipe as is take 1/2 c. and add 2 tsp. chili powder and 1/4 tsp. cumin. It's wonderful on corn on the cob or cornbread.
