Spicy Chicken Strips Recipe
SPICY CHICKEN STRIPS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 teaspoon vegetable oil
  • 1/2 pound skinless boneless chicken breasts cut crosswise into 1/4" strips
  • 1/4 teaspoon salt
  • 2 teaspoons butter
  • 1 tablespoon liquid hot pepper sauce
  • 5 celery stalks cut into 3" sticks
  • Dip:
  • 2/3 cup plain yogurt
  • 2 tablespoons mayonnaise
  • 2 ounces crumbled blue cheese
  • 3 tablespoons finely chopped scallions
  • 1/4 teaspoon coarsely ground black pepper

Directions
  1. In small bowl whisk together yogurt mayonnaise and blue cheese.
  2. Stir in scallions and pepper then set aside while preparing chicken.
  3. Heat oil in a large nonstick skillet then season chicken with salt.
  4. Cook chicken over medium high heat stirring frequently for 4 minutes.
  5. Remove skillet from heat.
  6. Add butter and hot pepper sauce to pan and swirl until butter melts and sauce coats chicken.
  7. Serve chicken and celery sticks along with blue cheese dip.
