Garlicky Steak And Asparagus

- 2 boneless beef top loin steaks, cut 3/4 inch thick (1-1/2 to 1-3/4 pounds total) shopping list
- 1 to 2 teaspoons bottled minced garlic (2 to 4 cloves) shopping list
- 1 teaspoon cracked or coarsely ground black pepper shopping list
- 1/2 teaspoon salt shopping list
- 16 to 20 thin asparagus spears, trimmed shopping list
- 4 teaspoons garlic-flavored olive oil or plain olive oil shopping list
- 1 cup beef broth shopping list
- 2 tablespoons dry white wine shopping list
- 1/2 teaspoon dijon-style mustard shopping list
How to make it
- 1. Preheat broiler. (We grilled the steaks) Trim fat from steaks. For rub, in a small bowl combine garlic, pepper, and salt. Sprinkle garlic mixture evenly over both sides of each steak; rub in with your fingers. Place asparagus in a shallow dish; drizzle with oil.
- 2. For sauce, in a medium skillet combine beef broth and wine. Cook over high heat for 4 to 5 minutes or until mixture is reduced to about 1/2 cup. Whisk in mustard. Cover sauce; keep warm.
- 3. Place steaks on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat until desired doneness, turning once halfway through broiling. Allow 8 to 10 minutes for medium-rare doneness (145 degree F) or 11 to 14 minutes for medium doneness (160 degree F). For the last 2 minutes of broiling, place asparagus on the broiler rack next to steaks; broil until crisp-tender.
- 4. Cut each steak in half. Spoon sauce onto 4 dinner plates. Top with steaks and asparagus.
