Watermelon Rind Pickles

- 1 melon with wide rind shopping list
- 1 tbls. lime shopping list
- 1 gal. water shopping list
- 1 qt vinegar shopping list
- 21/4 qts sugar shopping list
- 1 stick cinnamon shopping list
- 1 tbls. whole cloves shopping list
- about 1 tbls. fresh ginger shopping list
How to make it
- Select a melon with a wide rind. Peel rind, removing all traces of pink. Cut into pieces. Soak overnight in lime water ( 1 tbls. lime to 1 gal. water). Next morn. cover with clear water, and boil for 2 min. then rinse 2 times.* Make syrup early so it can set before adding rind.* Combine cinnamon, cloves, and ginger tie these in cheese cloth and add to vinegar &sugar . add rind to syrup cook until rind turns clear 30-45 min.. Dip rind into jars pour syrup over rind and seal.
