How to make it

  • Select a melon with a wide rind. Peel rind, removing all traces of pink. Cut into pieces. Soak overnight in lime water ( 1 tbls. lime to 1 gal. water). Next morn. cover with clear water, and boil for 2 min. then rinse 2 times.* Make syrup early so it can set before adding rind.* Combine cinnamon, cloves, and ginger tie these in cheese cloth and add to vinegar &sugar . add rind to syrup cook until rind turns clear 30-45 min.. Dip rind into jars pour syrup over rind and seal.

    Just kidding. I'm glad you found an association to your lessons.This is a country recipe. But keep in mind not all farm boys know about watermelon rind. I hope they enjoy!!!

    Just read a chapter of Farmer Boy to my 3rd graders-and it spoke of making watermelon rind pickles. This sounded so foreign to them. I will have try this so we can experience it!
