Shrimpy Couscous Recipe
This is just something I threw together and it was a hit. It goes together very quickly and is very versatile, Add or subtract to your own taste.

Ingredients
  • 2 Tablespoons olive oil
  • 1 large onion, chopped
  • 1 yellow or red bell pepper, chopped
  • 8 ounces sliced mushrooms
  • 4-6 cloves of garlic, pressed or minced
  • 1/2 cup (or so) Kalamata olives, roughly chopped
  • 1-8 ounce jar marinated artichoke hearts, drained and sliced
  • 1-15 ounce can garbanzo beans, drained
  • 2 pounds cooked shrimp, peeled
  • 3 cups dry couscous
  • 4 cups chicken stock
  • 1 cup shredded Parmesan cheese

Directions
  1. In a large saute pan, saute the onion, pepper, mushrooms and garlic in the olive oil about 10 minute or so. Add the olives, artichoke hearts, garbanzos and chicken stock, bring to a boil. Turn off heat and add couscous and shrimp. Cover and let stand for 5 minutes. Stir in Parmesan and serve.
