Shrimpy Couscous

- 2 Tablespoons olive oil shopping list
- 1 large onion, chopped shopping list
- 1 yellow or red bell pepper, chopped shopping list
- 8 ounces sliced mushrooms shopping list
- 4-6 cloves of garlic, pressed or minced shopping list
- 1/2 cup (or so) kalamata olives, roughly chopped shopping list
- 1-8 ounce jar marinated artichoke hearts, drained and sliced shopping list
- 1-15 ounce can garbanzo beans, drained shopping list
- 2 pounds cooked shrimp, peeled shopping list
- 3 cups dry couscous shopping list
- 4 cups chicken stock shopping list
- 1 cup shredded parmesan cheese shopping list
How to make it
- In a large saute pan, saute the onion, pepper, mushrooms and garlic in the olive oil about 10 minute or so. Add the olives, artichoke hearts, garbanzos and chicken stock, bring to a boil. Turn off heat and add couscous and shrimp. Cover and let stand for 5 minutes. Stir in Parmesan and serve.
