How to make it

  • In a large saute pan, saute the onion, pepper, mushrooms and garlic in the olive oil about 10 minute or so. Add the olives, artichoke hearts, garbanzos and chicken stock, bring to a boil. Turn off heat and add couscous and shrimp. Cover and let stand for 5 minutes. Stir in Parmesan and serve.
