How to make it

  • Preheat oven to 350F. Prepare crust , set aside.
  • In a bowl, beat egg yolk until light. Blend in salt, lemon juice, vanilla and almond extract, sugar, flour and lemon peel.
  • Put cottage cheese in a large bowl. Add a small amount of egg yolk mixture. Beat on high speed until curd is broken and nearly smooth.
  • Add remaining egg yolk mixture and sour cream, beat until blended.
  • Beat egg whites until stiff but not dry.
  • Fold into cheese mixture.
  • Pour into crust and bake for 1 hour.
  • Top with fresh fruits and glaze if desired or use fresh strawberry sauce found on my page.

    Hi Tamie! Thanks for the comment. I've never tried fat free sour cream as there's none available around here or at least I haven't seen any. There's a slight difference in taste by replacing cream cheese but I love cottage cheese so much that I didn't mind.

    We'll have to try this one out. My son loves cheesecake--I'll see if he likes it as well. Less fat is always a better option!! Have you used fat free sour cream? Just wondered if it would make a difference.
