Ricos Chicken San Remo

- 1 lb. whole chicken breast, bonned and sliced shopping list
- 2 T. vegetable oil shopping list
- 1/4 c. sun-dried tomatoes packed in olive oil, prepared according to package instructions and cut into strips shopping list
- 1/4 c. pitted black olives, sliced (kalamata) shopping list
- 1 t. flour shopping list
- 1/4 c. heavy cream shopping list
- 1/4 c. canned chicken broth shopping list
- 1 T. butter shopping list
- 1/4 c. chablis or Sauterne shopping list
- 4 T. leeks, cut into strips shopping list
- salt and freshly ground black pepper to taste shopping list
- 6-8 slices provolone cheese shopping list
How to make it
- In large skillet, saute the chicken in oil until cooked rare; drain. Add rest of the ingredients, except the cheese, and simmer until the sauce thickens and the chicken is cooked through. Top the chicken with the provolone and the sauce. Serve immediately.
