How to make it

  • Preheat oven to 350.
  • Heat the olive oil in an ovenproof medium skillet.
  • Saute the onion for 1 minute, then add the garlic and the zucchinis and saute for 1 minute.
  • Add the corn and the green chile and mix gently.
  • Add the cheese and 2 tablespoons of the milk and simmer until the cheese melts.
  • If the mixture looks too thick, add more milk.
  • Sprinkle the bread crumbs and more cheese on top.
  • Bake in a 350-degree oven for 15-20 minutes.
  • Note: You can also add other vegetables such as carrots, broccoli or cauliflower.
