I found this on a knitting site. "Joy" shared this remarkable recipe. It could be cholesterol free if the egg is replaced with an "egg-beaters" like product. Nice texture..enjoy!

Ingredients
  • Preheat oven 350F for metal pan or 325 for glass pan
  • Grease generously and flour the baking pan.
  • 1 c. sugar
  • 1/4 c oatmeal
  • 1 c. flour
  • 1/4 c. water
  • 1 egg or 1/4 c. egg replacement
  • 3/4 c. applesauce
  • 1/2 c chopped raisins or currants(left whole) or dried cranberries, etc. etc.
  • 1/4 c. chopped nuts
  • 3/4 t. baking soda
  • 3/4 t salt
  • 1/4 t. baking powder
  • 1/2 t. connamon
  • 1/2 t. ground nutmeg
  • 1/4 t. ground cloves

Directions
  1. Dump all ingredients into a large bowl.
  2. Using electric handheld eggbeater, blend on low speed for 1 min.
  3. Scrape down bowl and blend 1/2 minute longer.
  4. Beat 2 1/2 minutes at highest speed, scraping bowl 3 times more.
  5. Pour into prepared pan.
  6. Bake until center springs back when pressed lightly.
  7. Cool cake in pan on rack 10 minutes.
  8. Turn out onto rack. When cool, you might sprinkle with confectioners sugar or frost with cream cheese.
  9. The cake stands alone without any topping. A very nice cake.
