13 Egg White Angel Food Cake Recipe
An old recipe that I happen on to. Written as stated that it was made in 1937,surprising since I would beleive that if you lived on a farm that the eggs would be like money and using this many would seem somewhat of an extravagance.

Ingredients
  • 1 Tablespoon Water
  • 1/4 teaspoon Salt
  • 13 Egg Whites
  • 1 Cup Flour,sifted
  • 1-1/2 Cups Sugar
  • 1 teaspoon Cream of tartar
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Almond Flavoring

Directions
  1. Add water and salt to egg whites,set aside.
  2. Combine flour and sugar.
  3. Note:You will be sifting 5 times(guess this is the key to the recipe)
  4. Sift together,then add cream of tartar.
  5. Sift dry ingredients 5 times.
  6. Beat egg white mixture until light and fluffy.
  7. Gradually FOLD in vanilla and almond flavoring,alternating with dry ingredients.
  8. Pour into large angel food cake pan.
  9. Bake at 375 degrees for 25 minutes,turn off heat.
  10. Leave in oven for 30 minutes or more.
  11. Invert cake over a old empty soda bottle,and leave until cold,cut out of pan.
  12. Note: will rise quite a bit.
