Pork Sausage with Potatoes and Zucchini

- 1lb. good quality iItalian sweet or spicy sausage shopping list
- 1 medium onion,thinly sliced shopping list
- 1 lg.red skin potat,cut into 1/4" slices shopping list
- 2 medium zucchini,trimmed and cut into 1/2" slices shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 325
- Put sausage in a round stovetop-to-oven-to table baking dish at least 12"in diameter(I use a Le Creuset) or use a comparably sized chef's or saute pan. Pour in 1/2c water and place over med-high heat. Cover pan and cook sausage for 2 mins on each side,or till it turns gray. Move sausage to center of pan ;scatter the onions around the outside of the pan. Layer the potatoes over the onions and then put the zucchinin over the potatoes. Sprinkle everything with salt and pepper.
- Bake covered 40 to 45 mins or till sausage is cooked and vegetables are tender. Serve with some of the pan juices.
