Pork Sausage With Potatoes And Zucchini Recipe Pleclare / All my dishes

Easy and delicious one dish meal. Serve with a salad and some crusty bread.

Ingredients
  • 1lb. good quality iItalian sweet or spicy sausage
  • 1 medium onion,thinly sliced
  • 1 lg.red skin potat,cut into 1/4" slices
  • 2 medium zucchini,trimmed and cut into 1/2" slices
  • salt and pepper

Directions
  1. Preheat oven to 325
  2. Put sausage in a round stovetop-to-oven-to table baking dish at least 12"in diameter(I use a Le Creuset) or use a comparably sized chef's or saute pan. Pour in 1/2c water and place over med-high heat. Cover pan and cook sausage for 2 mins on each side,or till it turns gray. Move sausage to center of pan ;scatter the onions around the outside of the pan. Layer the potatoes over the onions and then put the zucchinin over the potatoes. Sprinkle everything with salt and pepper.
  3. Bake covered 40 to 45 mins or till sausage is cooked and vegetables are tender. Serve with some of the pan juices.
