New England Maple Muffins

- 2 cups all-purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1 1/4 teaspoons baking soda shopping list
- 1/4 teaspoon salt shopping list
- 12 cup ( 1 stick) softened butter shopping list
- 1/4 cup maple syrup shopping list
- 1 1/2 cups dairy sour cream shopping list
- 1 large egg shopping list
- 1/2 cup coarsely chopped pecans or walnuts shopping list
How to make it
- Preheat oven to 400 degrees.
- Grease 12 muffin pan cups or line with paper baking liners.
- If using paper baking liners, spray with non-stick cooking spray.
- In medium mixing bowl, mix together flour, baking powder, baking soda, and salt.
- *Tip: Measure baking soda and baking powder into palm of your hand and flatten with measuring spoon to remove any lumps.*
- In large mixing bowl, beat softened butter at medium speed of electric mixer until light and fluffy.
- Beat in maple syrup slowly.
- Beat in sour cream and egg until well-blended.
- At low speed, beat in flour mixture just until dry ingredients are blended. (Do not over-mix.)
- By hand, stir in coarsely-chopped nuts.
- Spoon batter into prepared muffin pan, filling 2/3 full.
- Bake muffins for 15-20 minutes until golden.
- ***For the best flavor, use pure maple syrup.
