How to make it

  • Preheat oven to 400 degrees.
  • Grease 12 muffin pan cups or line with paper baking liners.
  • If using paper baking liners, spray with non-stick cooking spray.
  • In medium mixing bowl, mix together flour, baking powder, baking soda, and salt.
  • *Tip: Measure baking soda and baking powder into palm of your hand and flatten with measuring spoon to remove any lumps.*
  • In large mixing bowl, beat softened butter at medium speed of electric mixer until light and fluffy.
  • Beat in maple syrup slowly.
  • Beat in sour cream and egg until well-blended.
  • At low speed, beat in flour mixture just until dry ingredients are blended. (Do not over-mix.)
  • By hand, stir in coarsely-chopped nuts.
  • Spoon batter into prepared muffin pan, filling 2/3 full.
  • Bake muffins for 15-20 minutes until golden.
  • ***For the best flavor, use pure maple syrup.
