Coconut Ginger Snap Pie Crust Recipe
This crust is great with key lime or lemon pie fillings.

Ingredients
  • 1 1/4 c. ginger snap cookie crumbs (about 20 cookies)
  • 1 c. unsweetened flaked coconut
  • 1/3 c. melted butter

Directions
  1. Preheat oven to 375
  2. In medium bowl combine cookie crumbs and flaked coconut
  3. With a fork, stir in butter until mixture is moist and crumbly
  4. Press crumb mix over base and up sides of 9" pie plate with sides slightly thicker than base
  5. Bake in oven for 8 to 10 minutes, until firm.
  6. Cool before filling
