How to make it

  • In a medium-sized saucepan, mix the sugar, gelatin and water over high heat; bring to a boil, stirring all the while. Remove from heat and mix in the lemon juice and zest. Put bottom of pan in cold water; cool until the mixture mounds when dropped from a spoon.
  • Meanwhile, beat the egg whites until stiff. With a rotary beater, slowly blend the gelatin mixture into the egg whites. Stir with a rubber spatula until it holds it shape. Spoon into dessert dishes and refrigerate until firm.
