Ingredients

1 or 2 portions leftover pork ribs

1 pkg ‘stovetop stuffing’ mix

¼ red sweet pepper

¼ green sweet pepper

¼ cup carrot shreds

1/4 cup water

2 tbsp butter

1 tsp pure vanilla extract

salt and pepper to taste

Directions

French the ribs by removing the meat from ½ of each rib section.

Add the meat to the cooking dish

Arrange the ribs standing, as though the meat is a crown roast of pork, standing on one side of the cooking dish

Add one dry pkg of stovetop stuffing mix around the meat

add the water

Add the butter

Add the carrot pieces

Add the peppers around the edge

Add the vanilla

Add salt and pepper to taste

Bake in low oven for 35 to 40 minutes, at 300*F

Garnish with fresh parsley and Thyme flowers

ENJOY!

NOTE: The reason the vanilla is added is because it enhances the wonderful flavor of the dish, without adding a vanilla taste.
