Elaines Mock Pork Crown Roast

- 1 or 2 portions leftover pork ribs shopping list
- 1 pkg ‘stovetop stuffing’ mix shopping list
- ¼ red sweet pepper shopping list
- ¼ green sweet pepper shopping list
- ¼ cup carrot shreds shopping list
- 1/4 cup water shopping list
- 2 tbsp butter shopping list
- 1 tsp pure vanilla extract shopping list
- salt and pepper to taste shopping list
How to make it
- French the ribs by removing the meat from ½ of each rib section.
- Add the meat to the cooking dish
- Arrange the ribs standing, as though the meat is a crown roast of pork, standing on one side of the cooking dish
- Add one dry pkg of stovetop stuffing mix around the meat
- add the water
- Add the butter
- Add the carrot pieces
- Add the peppers around the edge
- Add the vanilla
- Add salt and pepper to taste
- Bake in low oven for 35 to 40 minutes, at 300*F
- Garnish with fresh parsley and Thyme flowers
- ENJOY!
- NOTE: The reason the vanilla is added is because it enhances the wonderful flavor of the dish, without adding a vanilla taste.
