Concord Grape Jelly Recipe
We live about 1/2 hour away from Welch's headquarters. There are so many vineyards, and so many wonderful concord grapes! My cousin has more than this one. I'll have to raid her recipe box!!

Ingredients
  • 4 lbs concord grapes (should be about 1/4 under-ripe is no pectin is added)
  • 1/2 cup water
  • 3 cup sugar

Directions
  1. Wash, stem & crush grapes. Add water, cover and bring quickly to a boil. Reduce heat and simmer 10 minutes .
  2. Extract juice by means of jelly bag or food mill. Let juice stand overnight and strain through double thickness of damp cheese cloth to remove any crystals that may have formed.
  3. Measure 4 cups juice inot large kettle and add sugar, mix well and boil until mixture coats spoon.
  4. Remove from heat, skim foam, pour at once into hot scalled containers and seal.
  5. Makes 5 six-ounce glasses.
