- 1 lb of shrimps cleaned and de-veined ( or you may use shark, or mixed sea food) shopping list
- 5 ripe tomatoes cut into 4 pieces shopping list
- one tomato cut in half and thinly sliced shopping list
- 4-5 lemons shopping list
- 1 large red onion cut in half and slice very thinly shopping list
- 2 tbsp of olive oil divided shopping list
- fresh coriander (cilantro) shopping list
- salt and pepper to taste shopping list
How to make it
- Boil shrimps until pink and set aside ( if you are using any other sea food boil until it is cooked)
- while shrimp or sea food is cooking slice onion in half and slice very thin
- put the onions in a bowl add hot tap water and let soak for about a minute
- squeeze the onions in the hot water = this takes out the acid from the onion and makes it tender
- drain and put in a bowl add juice of one lemon add a dash of salt and put aside
- in a blender put the cut up tomatoes and 1 tbsp of olive oil and blend until smooth, it will look pinkish pour into a large bowl
- add the onions juice and all
- add the lemon juice of 4- 5 lemons
- add the shrimps ( or sea food of your choice)
- wash the cilantro take a hand full and take the stems out and chop the leafs until small and add to mix
- add 1 tbsp of olive oil
- add the sliced tomatoes
- salt and pepper to taste
- refrigerate until ready to eat
- * if it needs more lemon juice you can add it or if you want more liquid add a tomato, this is a recipe that you must adjust to your taste so try it and enjoy!!*
- you can serve this with a side dish of white rice
