Seviche Recipe
Seviche is one of my favorite foods to eat, it's fresh and the taste is incredible. If you make this once you will always make it.

Ingredients
  • 1 lb of shrimps cleaned and de-veined ( or you may use shark, or mixed sea food)
  • 5 ripe tomatoes cut into 4 pieces
  • one tomato cut in half and thinly sliced
  • 4-5 lemons
  • 1 large red onion cut in half and slice very thinly
  • 2 tbsp of olive oil divided
  • fresh coriander (cilantro)
  • salt and pepper to taste

Directions
  1. Boil shrimps until pink and set aside ( if you are using any other sea food boil until it is cooked)
  2. while shrimp or sea food is cooking slice onion in half and slice very thin
  3. put the onions in a bowl add hot tap water and let soak for about a minute
  4. squeeze the onions in the hot water = this takes out the acid from the onion and makes it tender
  5. drain and put in a bowl add juice of one lemon add a dash of salt and put aside
  6. in a blender put the cut up tomatoes and 1 tbsp of olive oil and blend until smooth, it will look pinkish pour into a large bowl
  7. add the onions juice and all
  8. add the lemon juice of 4- 5 lemons
  9. add the shrimps ( or sea food of your choice)
  10. wash the cilantro take a hand full and take the stems out and chop the leafs until small and add to mix
  11. add 1 tbsp of olive oil
  12. add the sliced tomatoes
  13. salt and pepper to taste
  14. refrigerate until ready to eat
  15. * if it needs more lemon juice you can add it or if you want more liquid add a tomato, this is a recipe that you must adjust to your taste so try it and enjoy!!*
  16. you can serve this with a side dish of white rice
