Sugar Roll Cookies

Great cut-from-a-roll cookies from the Marlboro Country Cookbook, "Morning Fires, Evening Lights" (Philip Morris, Inc, 1998)

Beat butter until soft and smooth; add sugar and vanilla. Beat well.
Press cooked egg yolks through a fine sieve; stir into butter mixture. Combine flour and salt, add to first mixture with egg and mix well.
Shape into a log about 6" long and 2 1/2 inches in diameter; chill thoroughly.
Cut into 1/2 inch slices and place on a cookie sheet; sprinkle with sugar, if desired.
Bake in a 350º oven for 12-15 mins or til edges are golden brown. Remove to cooling racks.

Tried this recipe tonight and didn't have much luck with it. Not one of my favorites. Just wanted to let you know, especially since I posted it. :o(

I agree - curious about the cooked egg yolks. I wonder what it does for the cookie - I'll have to try them and see!
