Thai Seared Shrimp W Tomato Basil And Coconut Recipe

Ingredients
  • 1 tbs. peanut or vegetable oil
  • 1 lb. uncooked peeled deviened medium shrimp, tails removed (thawed if frozen)
  • 1 cup sliced red onion
  • 1-2 tsp. red curry paste
  • 1 can diced tomatoes, drained
  • 1 tbs. lime juice
  • 2 tsp. packed brown sugar
  • 1/2 cup cocnut milk (not cream of coconut)
  • 1/4 cup chopped thai basil or basil leaves

Directions
  1. Heat oil over medium high heat in a 10 inch skillet.
  2. Cook shrimp and onion in oil for 2 minutes, stirring constantly
  3. Stir in curry paste, cook for 1 minute
  4. Add tomatoes, lime juice, and brown sugar
  5. Heat to boiling, reduce heat and simmer for 1 minute
  6. Stir in coconut milk and basil
  7. Heat over low heat until hot
