Thai Seared Shrimp W Tomato Basil and Coconut

- 1 tbs. peanut or vegetable oil shopping list
- 1 lb. uncooked peeled deviened medium shrimp, tails removed (thawed if frozen) shopping list
- 1 cup sliced red onion shopping list
- 1-2 tsp. red curry paste shopping list
- 1 can diced tomatoes, drained shopping list
- 1 tbs. lime juice shopping list
- 2 tsp. packed brown sugar shopping list
- 1/2 cup cocnut milk (not cream of coconut) shopping list
- 1/4 cup chopped Thai basil or basil leaves shopping list
How to make it
- Heat oil over medium high heat in a 10 inch skillet.
- Cook shrimp and onion in oil for 2 minutes, stirring constantly
- Stir in curry paste, cook for 1 minute
- Add tomatoes, lime juice, and brown sugar
- Heat to boiling, reduce heat and simmer for 1 minute
- Stir in coconut milk and basil
- Heat over low heat until hot
