Blueberry Soup

- 1 Tbsp lemon rind shopping list
- 1 Cinnamon Stick shopping list
- 2 whole cloves shopping list
- 1 pint blueberries (Wild Best) shopping list
- 4 Tbsp honey shopping list
- 4 cups apple, or orange juice. (I like apple for this one) shopping list
- 1 cup sour cream shopping list
How to make it
- Put lemon rind, cinnamon and cloves in a small cheese cloth bag and place in heavy saucepan.
- Add all other ingredients except the Sour Cream and simmer over moderate heat until blueberries burst.
- Remove the bag of spices. Let soup cool.
- Puree the mixture a cup or two at a time. (less mess)
- Cover and chill overnight.
- Serve in small bowls with a sour cream dollop on top.
- Rusk Bread is the traditional accompaniment.
