How to make it

  • Put lemon rind, cinnamon and cloves in a small cheese cloth bag and place in heavy saucepan.
  • Add all other ingredients except the Sour Cream and simmer over moderate heat until blueberries burst.
  • Remove the bag of spices. Let soup cool.
  • Puree the mixture a cup or two at a time. (less mess)
  • Cover and chill overnight.
  • Serve in small bowls with a sour cream dollop on top.
  • Rusk Bread is the traditional accompaniment.

    I love cold soups...thanks for this one! People shudder when I say "cold soup." What do they know?

    Awesome! Very similar to my Raspberry Soup, which I posted because of so many strawberry ones, out there...I LOVE the idea of blueberries. We don't get local blueberries, here, but I can get some wonderful ones if I'm willin' to pay for 'em! ;) Maybe it's a race for the pics...if I try it before you get one, I'll share a picture! :)
