Blueberry Soup Recipe

	Tilgidh / All my dishes 1 year, 3 months ago I looked this one up in the database. There are some blueberry soup recipes, but this one has some different ingredients and made differently. Ingredients

1 Tbsp Lemon Rind

1 Cinnamon Stick

2 Whole Cloves

1 pint Blueberries (Wild Best)

4 Tbsp Honey

4 cups Apple, or Orange Juice. (I like apple for this one)

1 cup Sour Cream

Directions

Put lemon rind, cinnamon and cloves in a small cheese cloth bag and place in heavy saucepan.

Add all other ingredients except the Sour Cream and simmer over moderate heat until blueberries burst.

Remove the bag of spices. Let soup cool.

Puree the mixture a cup or two at a time. (less mess)

Cover and chill overnight.

Serve in small bowls with a sour cream dollop on top.

Rusk Bread is the traditional accompaniment.

Awesome! Very similar to my Raspberry Soup, which I posted because of so many strawberry ones, out there...I LOVE the idea of blueberries. We don't get local blueberries, here, but I can get some wonderful ones if I'm willin' to pay for 'em! ;) Maybe it's a race for the pics...if I try it before you get one, I'll share a picture! :)
