Special date recipe from a Saudi Cook for this sweet date paste cookie tyopicaly served during Ramadan I wish my friends a safe, peaceful year !

Ingredients
  • 1 pound dates, pitted
  • 1 Tbs butter
  • 1/2 cup ghee ( calrified butter )
  • 1 cup whole wheat flour
  • 1/2 tsp cardamom
  • 1/2 cup chopped mixed nuts ( almonds, cashews etc )

Directions
  1. In a food processor combine dates and 1 tbs butter and puree into a paste.
  2. Heat ghee in sauce pan and stir in flour and cook until mixture turns brown over medium heat , about 5 minutes.
  3. Stir in date paste and spice.
  4. Cook and stir until well combined on low heat for a few minutes.
  5. Stir in nuts
  6. When cool enough to handle, pinch off pieces of mixture and form into balls.
  7. Place in little paper fluted cups
  8. These will store airtight up to a week
  9. Typically served with coffee
