Chicken With Provencal Sauce

- 4 (6 oz.) boneless, skinless chicken breasts shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp freshly ground pepper shopping list
- 1 1/2 tsp olive oil shopping list
- 1 garlic clove, minced shopping list
- 1 C fat-free, less sodium chicken broth shopping list
- 1 1/2 tsp dried herbs de Provence shopping list
- 1 tsp butter shopping list
- 1 tsp fresh lemon juice shopping list
- fresh thyme sprigs, optional shopping list
How to make it
- Place chicken breast halves between 2 sheets of plastic wrap and pound to 1/2 thickness
- Sprinkle chicken evenly with salt and fresh ground pepper
- Heat oil in a large skillet over medium heat
- Add chicken to pan and cook approximately 6 minutes on each side or until juices run clear. Remove from pan and keep warm.
- Add garlic to pan; cook 1 minute, stirring constantly
- Add broth and herbs de Provence; bring to a boil, scraping pan to remove any browned bits
- Cook until broth mixture is reduced to 1/2 C about 3 minutes
- Remove from heat; add butter and lemon juice to pan, stirring until butter melts
- Serve sauce over chicken, garnishing with thyme sprigs, if desired
- 248 calories a serving
