How to make it

  • Place chicken breast halves between 2 sheets of plastic wrap and pound to 1/2 thickness
  • Sprinkle chicken evenly with salt and fresh ground pepper
  • Heat oil in a large skillet over medium heat
  • Add chicken to pan and cook approximately 6 minutes on each side or until juices run clear. Remove from pan and keep warm.
  • Add garlic to pan; cook 1 minute, stirring constantly
  • Add broth and herbs de Provence; bring to a boil, scraping pan to remove any browned bits
  • Cook until broth mixture is reduced to 1/2 C about 3 minutes
  • Remove from heat; add butter and lemon juice to pan, stirring until butter melts
  • Serve sauce over chicken, garnishing with thyme sprigs, if desired
  • 248 calories a serving

    This is a really good recipe. I have made the french version in culinary school which is a bit more intense. I just noticed one thing in your recipe that someone may not understand.. what the ingredient is for herbs de provence. So for someone who doesnt know what that is, can you provide in parantesis whether this is an ingredient that is in your spice isle or something you can make from fresh herbs. awesome post!!! you've got my five!
